What is Chicken Inasal?
Chicken Inasal is one of the best-known grilled dishes in Filipino cuisine. Originating from the Visayas region and particularly associated with the city of Bacolod, it is loved for its aromatic, slightly citrusy and smoky flavor.
The word “inasal” refers to a traditional Filipino style of grilling meat. Before it reaches the grill, the chicken is marinated so it can absorb the flavors while remaining tender and juicy.
What makes Chicken Inasal special?
The marinade typically combines ingredients such as calamansi or other citrus, vinegar, garlic, ginger and spices. After marinating, the chicken is slowly grilled and basted as it cooks, creating a beautifully grilled exterior and its distinctive smoky aroma.
Unlike many other grilled chicken dishes, Inasal doesn’t rely on a thick sauce for its flavor. Its character comes primarily from the marinade, seasonings and cooking over the grill.
How is it eaten in the Philippines?
Chicken Inasal is traditionally served with hot rice and a selection of condiments. It’s a simple yet flavorful meal enjoyed in restaurants, local eateries and family gatherings throughout the Philippines.
At Tambayan del Barri, we want to share this taste of Filipino cuisine with Andorra: marinated chicken cooked over the grill and served with the unmistakable smoky character of Inasal.
